KEY POINTS
Easiest way to get guest's attention when serving entree: announce name of dish.
Your restaurant may require you serve from the left which is what you'll do.
But I typically just serve from the side that makes the most sense (the side guests can see me from, side with greatest opening, etc).
I serve guests as if I'm hugging them so I don't have my forearm/ elbow in their face, so they can see the dish.
When serving entrees, I move things out of the way as necessary. The less I need the assistance of the guest, the better.
After dropping plates, I pause, let them scan the plates, then tell them to enjoy if there are no guest requests.
